FIRST JOB: My first job was as a dishwasher, prep cook and line server at the Biscayne Cafeteria in Miami.

DREAM ALTERNATE CAREER: I would own a vineyard near a beautiful fly-fishing river, raise heirloom livestock and vegetables, and share this bounty with the world in a simple yet elegant restaurant rooted in nature, sustainability and hospitality. Since this is an alternate universe, I’d also be a chef with international culinary training.
